Beibei pumpkins (also known as gold chestnut pumpkins) are the "light meal specialists" of the squash world. Originally bred in Japan by Kyowa Seed Co. in 1998, they were later introduced to China. Botanically, they belong to the Cucurbita maxima species and are a different variety from common Chinese pumpkins. Petite and easily held in one hand, they are high in starch and very filling, making them a great substitute for staple grains. With only about 49-78 kcal per 100g, they are the top choice of whole grains for those on a diet!
